Versatile Recipes

Don’t you just love when you have that go-to recipe that is so versatile you can make it without having to plan ahead or make a trip to the grocery store or fresh market. Being a Mom of two girls, and having a busy lifestyle where we always seem to be on the go with school, work, and sports, there needs to be easy, healthy recipes that any of us can make within just a few minutes. I am thankful my girls love to create recipes in the kitchen with me, and have created a few of their own favorites just based on this one easy, versatile, and very healthy breakfast treat, or any time snack.

Flax Muffin in a Cup!

1⁄4 cup ground flax meal or 1 pkt oatmeal
1⁄4 cup fresh blueberries, ( or any fruit such as apple, pear, or banana chopped)
1 egg or egg substitute
1/4 tsp cinnamon, nutmeg, and ginger
1 tsp pure vanilla extract ( or any flavor you choose)
1/4 t baking soda
1 Tablespoon pumpkin or apple butter

Mix ingredients (total volume approximately 3⁄4 cup). Spray a ramekin or small microwavable glass cup with cooking spray. Microwave 1 minute and 20 seconds for most microwaves.

Nutrition facts: Approx. 240 calories, 25 grams of Carbohydrate (Dietary fiber 8 grams), 10 grams Protein, 7 grams fat

 

Madeline’s -- Razzleberritasmic Twist

Add a combo of blackberries, raspberries, and blueberries Add 1 T. toasted almonds
Add 1 t. lemon zest
Use almond extract
Chloe’s --- COCO MOKO
Use banana as the fruit
Toss in 1 T. toasted coconut
Add 1 t. dark cocoa powder
Throw in 2 t. mini dark chocolate chips Use coffee extract
