Preheat Oven to 380 degrees: Saute in frying pan with 2 T. olive oil, 2 cups fresh veggies of choice until tender. Add in your favorite spices....I used garlic, onion, cayenne, chives, dill, salt, pepper, and celery seed. Let cool.....OR thaw 2 c. frozen veggies, heat slightly and mix in spices. Beat 8 eggs or a combo of 1/2 eggs and half egg beaters Roll out pie crust and place in pie pan. Add I can wild alaskan salmon to bottom layer. Add layer of veggies. Add 1-2 ounces of your favorite cheese. I used goat cheese but even light cream cheese will work great with the salmon. Add the egg mixture. Bake for 45 minutes or until center is slightly firm (not jiggly ;) Let cool 5-10 minutes before serving for best results of holding it’s form.
