Holiday Breakfast Ready at the Market — Fresh, Festive & Farm-to-Table

As the holidays and the chilly weather rolls in, there’s no better way to start a festive morning than with a holiday breakfast made from fresh, local ingredients; and, the Saratoga Farmers’ Market is the perfect place to gather everything you need.

Vegetables, fruits, eggs, and dairy are fresh and flavorful at the market, making your holiday breakfast extra delicious!  And, eating seasonal not only tastes better, it supports your local community and economy.

Here are a few market breakfast ideas that can keep it easy;

Make ahead Crispy potatoes – grab fresh potatoes, pre prep and have them ready to bake up and add that extra crisp the morning you are serving with delicious fresh seasonings. 

Sheet Pan Pancakes – grab fresh maple syrup, jams, honey & local peanut butter to add to the mix and/or to put on top (yum).

Market-Fresh Omelet with Cheese and Veggies – use fresh eggs, local cheese, and seasonal veggies (bell peppers, onions, greens, mushrooms, broccoli, etc) for a simple, nutritious omelet that highlights market produce. 

Fruit & Yogurt Parfait/Dairy or Smoothie – pick up local apples, yogurt and granola.  Layer for parfaits or use the dairy to blend into smoothies.

Alternative Holiday Bites!

Mint Chocolate Avocado Brownies 

Ingredients

1 small ripe avocado, pit and peel removed

2 large eggs

1 teaspoon vanilla extract 

1/4 teaspoon mint extract

1/2 cup coconut sugar

1/2 cup light brown sugar

1/2 cup unsweetened cocoa powder

1/2 cup flour (of choice)

1 teaspoon baking powder

¼ teaspoon fine sea salt

1 cup mini dark (or semi-sweet) chocolate chips 

Instructions:

1. Preheat oven to 350 degrees. Line an 8-inch square baking pan with parchment paper.

2. Place the avocado into a mini food chopper or blender, mash until smooth. Scoop the mashed avocado into a bowl.

3. Mix in the sugars, eggs, and extracts mixing all of the ingredients thoroughly together.

4. Add the flour, cocoa powder, salt, and baking powder. Stir until just combined. Don’t over-mix.

5. Add 3/4 cup of the mini dark chocolate chips into the batter and mix.

6. Pour the batter into the pan and top with the remaining 1/4 cup of mini chocolate chips.

7. Bake for 25 minutes; the tester will come out mostly clean. There will be some residue.



WOWButter Cookies


Gluten Free!

Ingredients

3 eggs

1 cup WOWButter (WOWButter is an all-natural peanut free spread)

1/2 cup brown sugar

1/4 cup maple syrup

1 1/2 teaspoons vanilla extract

1 1/2 cups gluten free flour 

1 teaspoon baking powder

1/2 teaspoon salt

1 cup mini chocolate morsels (the Enjoy Life brand is a great allergy friendly alternative to try)

Instructions:

1. Using an electric mixer, mix the eggs, WOWButter, brown sugar, maple syrup and vanilla extract together well.  

2. In a separate bowl, stir the gluten free flour, baking powder and salt together. Slowly add it to the WOWButter mixture and continue to mix until all of the ingredients are blended.

3. Stir in the mini chocolate morsels (by hand).

4. Let the batter set while you warm the oven to 350 degrees.

5. Use a medium cookie scoop to make and bake 24 cookies. Bake for 10 – 12 minutes.  

6. Remove the cookies from the oven and let them set for a few minutes before using a thin spatula to remove them from the baking sheet. Place them on cooling racks.  



Eggnog Waffles 

Ingredients

1 egg

1 cup whole wheat flour 

1 cup cake flour

4 oz. cinnamon applesauce

1 – 1 1/2 cups Almond Nog (or your favorite)

3 tablespoons brown sugar

1 tablespoon baking powder

1 teaspoon vanilla extract

½ teaspoon cinnamon

½ teaspoon nutmeg

¼ teaspoon sea salt

Avocado cooking spray

Instructions:

Beat the egg in a medium bowl, until frothy. Add the remaining ingredients; mix until smooth. Add, approximately, 2/3 cup of batter to a pre-heated waffle maker that’s been coated with cooking spray.  Spread it evenly. Cook until your waffle is golden brown. Repeat the process until all of the batter has been used.  

Top with a Triple Berry Fruit combo along with a yogurt glaze. 

The triple berry fruit is a frozen combination found at most grocery stores. Simply thaw it before topping off the waffles with the yogurt glaze. As it thaws it creates a delicious, fresh fruit juice.  

Yogurt Glaze:  Stir together 3 oz plain Greek Yogurt, 1 – 2 tablespoons of almond nog, 1 tablespoon honey.

The Who’s Who of the Holiday/Winter – Saratoga Farmers’ Market

The Saratoga Farmers’ Market continues to celebrate its 47th year in the community serving local farms, local makers & producers, and the community as it enters the cold season with their move indoors to the Wilton Mall.  The market will take place weekly on Saturdays starting November 1st and will continue indoors through April 25th in the food court area near the movie theater.

The Market is on the Move

As the Saratoga Farmers’ Market prepares to wrap up its 2025 outdoor season at High Rock Park, the vendors and market board want to extend a heartfelt thank-you to the community for its continued support. For 47 years, the market has proudly championed local growers, producers, makers, and small businesses—nurturing a strong connection between Saratoga’s residents and their local food system.

With the final outdoor market taking place on Wednesday, October 29th, the Market is getting ready to move indoors for the winter season at Wilton Mall.

Exciting News!

The Holiday/Winter Market is growing! This year, the market will feature 56 vendors—a mix of returning favorites and exciting new additions. Shoppers can expect the same vibrant variety of fresh local produce, meats, eggs, baked goods, flowers (fresh and dried), hand-crafted items, spirits, gifts, and much more.

The Holiday/Winter Market opens on Saturday, November 1st, with a new time: 9:30 AM to 1:30 PM. You’ll find the market in its regular spot—inside the Wilton Mall food court, near the movie theater (now open!).

What to Expect This Season

The market is thrilled to welcome back sponsors Adirondack Trust, Assure, and Healthy Living; their support helps keep community programming thriving.

This season also brings something brand new — the launch of “Fresh Eats”, a cooking demonstration program that highlights market ingredients and local flavors. The first demo kicks off on November 22nd, in partnership with CDPHP and Comfort Food Community.

Each week, visitors can also look forward to live music and appearances from local non-profit organizations.

And for those who want to give back — you can sponsor a snowflake for just $5 to help support all of the market’s free community programming throughout the year. Snowflakes will be available November through December only.

3rd Annual Howling Halloween at the Market 

The Saratoga Farmers’ market is partnering with Prestwick Chase at Saratoga to bring the 3rd Annual, 2025 Howling Halloween to the Saratoga Farmers’ Market.

WHAT is Howling Halloween?  It is a fun way to celebrate the end of the outdoor market, Halloween, and of course, the most adorable fur babies from the Saratoga and surrounding areas.  

Bring your pup in costume (or not) to the market on Saturday, October 25th and have a professional photo taken by local photographer Pattie Garrett.  Photos are $5, with a donation to the Saratoga Farmers’ Market which is a 501(c)3 organization.  All proceeds support free local programming, free festivals & events, and administrative costs at the market.

Enjoy live music by Mandolins Too and Hunter Gifford.  And there will be a family fun table with the Saratoga Springs Library Mobile Library Unit.

The Beet: A Rooted Favorite of the Fall Season

One of the most vibrant signs of the season can be found at the Saratoga Farmers’ Market: the humble beet. Beneath its earthy skin lies a gem of deep red, golden, or even striped hues.

At the market, local farmers bring in freshly harvested beets in all their varieties. You’ll find the familiar deep crimson reds alongside golden beets with their mild sweetness, and the eye-catching Chioggia beets. Many vendors offer them by the bunch with greens still attached; a sign of freshness.

Beyond their beauty, beets are loaded with nutrition. They’re rich in fiber, folate (vitamin B9), manganese, potassium, and iron. Their deep pigments, known as betalains, are powerful antioxidants. Beet greens are equally nutritious, offering vitamins A, C, and K, plus calcium and iron, making them a delicious and healthy addition to sautés and soups.  Or toss them into olive oil with garlic and salt to serve as a side dish.

Beets are as versatile as they are colorful. Roast them to bring out their sweetness, blend them into smoothies, or grate them raw into salads for crunch and color. They can be steamed, boiled and baked.  

Beet Storage Tips

* Cut off beet greens about 1–2 inches above the root — leaving a bit of the stem helps prevent bleeding. Store the greens separately in a sealed bag in the refrigerator and use them within 2–3 days.

* Don’t wash before storing; moisture encourages spoilage. Gently brush off any soil but wait to wash until you’re ready to cook.

* Place unwashed beets in a perforated plastic bag or reusable produce bag and store them in the crisper drawer. They’ll stay fresh for 2–3 weeks, and sometimes longer.

* If you buy in bulk, store beets in a cool, dark, and humid place (like a root cellar or basement). Keep them in a box of slightly damp sand, sawdust, or peat moss to maintain moisture. Under these conditions, beets can last 2–3 months.

* Cook beets (boil or roast), peel, and freeze them for later soups and salads.  Or pickle slices in vinegar for a tangy treat that lasts for months.
